Pour 20ml peach schnapps into a shot glass. The schnapps forms the base and its citric acid content is what triggers the curdling reaction. Archers is the most widely available in the UK, but De Kuyper or any peach schnapps with citric acid listed in the ingredients will work.
Slowly pour 10ml Baileys Irish Cream into the centre of the glass. Do not use a bar spoon, do not pour down the side, do not try to layer it neatly. The whole point is for the Baileys to sink into the schnapps and curdle. Pour it from a low height directly into the middle and let gravity do the rest.
Watch the curdling effect happen. Within seconds, the Baileys will begin to coagulate, forming white lumps and tendrils that float in the amber schnapps. This is the 'brain' effect. The more slowly you poured the Baileys, the more distinct the tendrils will be.
Add a single dash of grenadine. Drop it right into the centre of the curdled Baileys. The grenadine is denser than both liquids and will sink through, leaving red streaks that look like blood vessels running through the brain matter. Use a cocktail stick to place it precisely if you want maximum visual impact.
Serve immediately. The effect is at its most dramatic in the first 30-60 seconds after preparation. After a few minutes, the curdled Baileys will settle to the bottom and the visual impact fades.
The Brain Hemorrhage effect is a controlled acid-casein reaction. Baileys Irish Cream contains dairy milk, which is rich in a protein called casein. Casein molecules are normally suspended evenly throughout the liquid, held in place by their negative electrical charge which keeps them repelling each other.
Peach schnapps contains citric acid. When the Baileys enters the acidic schnapps, hydrogen ions from the acid neutralise the negative charges on the casein molecules. Without their electrical repulsion, the casein molecules clump together into visible white strands, the 'brain' effect. This is the same chemical process used in cheese-making and is why adding lemon juice to milk causes it to curdle.
The grenadine works differently. It is simply denser than the other two liquids (due to its high sugar content), so it sinks through everything and pools at the bottom. As it descends, it leaves red trails through the white curdled Baileys, creating the 'hemorrhage' effect. The drink is completely safe to consume, curdled dairy proteins are no different to eating cottage cheese or ricotta.
Warmer Baileys curdles more dramatically. Fridge-cold Baileys produces tighter, less visible clumps.
A slow pour creates distinct tendrils. Dumping it in all at once produces a cloudy mess rather than brain-like formations.
Cheap grenadine is basically red sugar water. Real grenadine (pomegranate-based) has better colour density and sinks more slowly, leaving cleaner red trails.
The entire point is the visual. Use clear shot glasses, not coloured or frosted ones. A slightly larger glass (30ml+) gives the effect more room to develop.
